In a perfect world, you’d be home every night, with three hours to whip up a delicious veggie meal. If only. Sometimes, you get hella busy, lazy, or you’re on the road.
Here are my top 5 meatless meals for when you’re away from your kitchen. Some are healthier than others. I’m not including info on calories or fat, because it’s common sense: if you have to stop for a veggie burger and fries at Burger King for dinner one night, make up for it by eating your next few meals uber-healthy.
Top 5 Meatless Meals on the Go
#1: Veggie Sandwich from Quiznos
This is the best (tastiest) veggie sandwich from a chain restaurant that I have found. Guacamole, black olives, lettuce, tomatoes, onions, sautéed mushrooms, mozzarella, cheddar, and Red Wine Vinaigrette. My husband gets it with extra vinaigrette and some hot peppers. Yum.
#2: Veggie Burrito Bowl from Chipotle
If you want to be healthier, get the bowl. If you don’t give a *$(@ about eating healthy today, go for the burrito. Try it with rice, black beans, tomato salsa, medium salsa, cheese, guacamole, and lettuce. If you ever do a detox, keep this one in mind (minus the cheese).
#3: Pasta Fresca from Noodles & Co.
Penne pasta, red onion, roma tomatoes and spinach sautéed in a sauce with balsamic, white wine, roasted garlic and fresh herbs. Topped with feta or parmesan. You could add extra mushrooms and spinach for more veggies. I also add a generous amount of Sriracha to make it spicy.
#4: Egg White and Sundried Tomato Breakfast Sandwich from Bruegger’s
If you need some protein on the go in the morning, opt for this one. Egg whites, cheddar cheese, and sundried tomatoes on a bagel (asiago is a good choice).
#5 Morningstar Veggie Burger and Fries from Burger King
This may not excite you very much, except that it is a meatless option for when you are hungry on the road. As far as I know, Burger King is the only nationwide chain to offer a veggie burger.subscribe to my RSS feed!
